Jack's parents sent us LOTS of mango, some of them didn't quite make it in one piece so we turn them into mango sorbet for this insane 40degreeC heat. Put all the ingredients in a blender. And blend until you get a smooth paste. here's two ways of doing it. 1. strain, using only the liquid, or 2. dump the whole thing in a freezer container. It will look a bit like loose jelly... Because I do not want to waste anything, this is the option I go for. It will take longer for the sorbet to freeze and it will be sweeter too, so taste test your mangoes before adding sugar. Freeze for 2 hours, at this point, it will be a bit like slushy. Blend the slushy in the blender and return the mixture to the freezer container. Freeze for another 4-6 hours. Additional suggestion is to bypass the sugar and water and use syrup which you can infuse your own flavors. Here's the recipe for syrup. Simple Syrup |
