Ingredients
1 large cucumber sliced 1 radish, thinly sliced 1 cup cherry tomato, halfed 1 head of leafy lettuce of your choice 6-8 black olives, sliced 1/2 carrot, sliced 1/2 red onion, thinly sliced 1/2 cup diced feta cheese juice of 1 lemon + zest 3-4 tbs extra virgin olive oil 1 pinch black pepper 1 tsp dried oregano 1 tsp mustard or French mustard Optional : 1 pinch salt (feta cheese will be a bit salty already so if you are watching your salt intake, you may choose not to add more salt into your salad) Optional: 1 clove garlic, diced. Direction
Wash all your vegetables and cut them into desired size. place all vegetables into a mixing bowl along with the fetta cheese and olives. mix olive oil, mustard, lemon juice and zest, oregano, salt and pepper drizzle salad dressing onto the salad, mix well. serve chilled. Serve 2-4 |
