Nothing is like roasted vegetables to go along with your meals. It is simple to make, and add colours to your dinning table.
Ingredients
2 tbs unsalted butter, cut into cubes.
3 tbs olive oil
4 medium head of potatoes, roughly cut into 1"
4 medium sized carrots, roughly cut into 2" sticks
1 large onion, cut into 8 sections
1/2 lbs Brussels sprout
1 tsp dried rosemary
1 tsp dried thyme
Salt and pepper to taste
How to
Preheat the oven to 200 degree Celsius
Toss all the vegetables in olive oil and season generously with salt and pepper. sprinkle butter cubes on top.
Roast for 15 minutes, then toss the vegetables so that the bottom part is exposed to the heat and roast for another 15-20 minutes until the potatoes are cooked through. The colours will be uneven, but that's what we want.
Sprinkle with some salt and pepper before serving. Serve hot.
