Add a little flavor into the ordinary Mash and you will have a dish that is unforgettable and it will become your family's new favorite side dish!
Ingredients
6 large potatoes (cut into 1" cube)
8-10 tbs of butter (let's just say, one potato uses 1.5 tbs) cubed
3/4 cup of heavy cream (more if too dry)
3 tbs pesto
salt and pepper to taste
How to
Wash and cut the potatoes to size
Boil water in a large pot, add salt.
Add the potatoes in once the water has come to a rolling boil
The potatoes are done when a fork can be inserted into the potatoes easily.
Drain the potatoes, careful, it will be steaming hot!
In the same pot, dump those hot potatoes right in, and you have to work fast now. Add butter, and mash away, once the butter has melted, add the cream until you have reached the desired texture.
Fold in the Pesto and season to taste.
Serve 6 (a potato a person).
*Do not forget to leave the butter and heavy cream out to reach room temperature. Why? you ask. It is because when incorporated the butter and cream into the hot potatoes later, it will not bring the temperature down and ended up with lukewarm mash!
