Mop Sauce is the base of a good steak. You can ask the butcher to pack your leftover trimmings from you dressed steak. The step is very simple, and with this sauce, you will add a deeper flavor to your steak, simply brush on during cooking. It will keep that meat moist and add flavor!
Ingredients
- 1 cup or more of left over beef trimmings and fat.
- 2 tbs unsalted butter
- 1 bulb of garlic, sliced the top off
- 2 bay leave
- 1 sprig of fresh rosemary or 1 tsp of dried rosemary
- Salt and pepper to taste
How to
On low heat in a heavy based or cast iron skillet, add the meat trimming. The low heat will gently cook the trimmings and will render the fat without burning everything!
After about 2 minutes, the rest of the ingredients.
Keep cooking on low for about 15-25 minutes until the fat has been rendered from the trimmings.
Remove the trimmings and herbs and reserve the garlic which can be served with warm crusty bread.
Use the mop sauce to literally 'mop' the the steaks to add flavors and aroma, or pour into a heat proof jar, let cool and use instead of butter for your bread.
