Frangipane is very versatile almond cream custard. Recipes can vary to allow for baking, or straight up piped onto tarts and pastry. It adds a sweet richness to your tart fruit dessert. If you do not have almond meal, just place 3/4 cup almonds into the food processor and process the heck out of it until it's powder like. If you like, roast the almonds to give a more smoky hint. To make a frangipane, start by adding butter and sugar to a food processor and mix until it form a creamy paste. Mix in the almond and finish with egg and vanilla extract. Beat until all ingredients are mixed together but do not over beat the custard at this point. Pour on top of the cooked tart shells, add your seasonal tart fruits or pipe into pastry.. |
