So, after a year of fresh pesto and pasta, we, well, I got a little bored with the plain looking plates. So I added grilled river prawn to this dish and now, this dish has become a staple in entertainment dinning. Simple to make, and elegant and exotic at the same time, what's not to love?
The trick is to add a little bit of pasta water while mixing pesto with the pasta, it will add saltiness as well as giving the dish a bit of a shine, not to mention, helping the sauce coat the pasta better too!

How to
Boil water with salt on high heat, once on rolling boil, add the pasta of choice.
Add a little bit of olive oil onto a pan on high heat and pan grill the prawn, or if you have a grill, throw them on the grill. after 3 to 4 minutes, flip so that the prawn is evenly cooked. Once cooked, set aside.
Reserve 1/2 cup or more of pasta water, and drain the rest.
On a medium pan, fry the bacon and render the fat, once crispy, pour the drained pasta into the pan, add the pesto and 1/4 cup of pasta water, toss until the sauce has coated every strain of pasta.
Plate the mixed pasta and arrange the prawns on the plate!
Serve hot with dusting of grated Parmagiano.
Serves 4.
- 2 rolls of fettuccine per person, so that's about 8 (or any pasta of choice)
- 1 1/2 cup of pesto
- 1/2 cup pasta water
- 4 tbs olive oil
- 4 racks of bacon with plenty of fat, chopped
- 4 medium size river prawn, washed and trimmed.
