The first day of winter has arrived in Bangkok! With the fantastically cool 18 degree, it's grilling time! But as I get older, the big BBQ grill and parties seems too much of a bother to me so Jack and I settled for some light, Japanese style grilling and ended the night with warming udon.
I got a new idea yesterday from a Japanese television show - pan seared duck with soba noodles. So I though that I might modify it a little and make it into something easier.
One can substitute duck for thinly sliced beef or pork, add mushroom, vegetables and tofu to the broth... the possibilities are endless!

How to
Slice the duck into 5mm slices, reserve the fatty part. Season the duck with a dash of salt and pepper and soysauce Slice the leek into 1/12" logs, slice some young green part for garnish and reserve the large older green part for stock. In a warm skillet, I used cast iron Sukiyaki pan, but any pots or pans will do, add the reserved fatty duck skin first, render the fat as you increase the heat to high. Remove the fat, add the rest of the duck into the hot pot along with the leeks. Do not stir, let the duck cook on one side for about 4 minutes and then turn the duck and leeks slices. This will brown the meat and render the fat. Cook for another 2 minutes and remove the duck and leeks, set aside. Add the water into the pot/pan. Throw in the green part of the leeks. Add soy sauce and mirin. Turn the heat to high until the soup is boiling, then remove the leeks. Skim off any unsightly congealed fat, leaving the rest bubbling in the pot. It's the delicious part! Add miso into the soup, season as needed, then add the cooked duck meat and leeks into the soup. Then spoon the udon noodles into the bowl, along with the broth, place 3-4 pieces of duck slices on top and a couple of leek logs. Garnish with fresh sliced leeks and the noodle soup is ready to serve! Serve 4. |
