Our gardener has a banana farm just outside of Bangkok, and twice a month, he will come by and fix our garden for my parents and gives us some of his freshly cut bananas. These fruits are different from store brought ones, first off, they are aromatic, and sweeter and will ripe to perfection in just one day. Super market bananas has to be cut before it's prim so that they can stay on the shelf longer. These will never become sweet and the banana smell will not be as intense. Banana muffins and breads are a good and cheap way to use up these fruits as well as to provide yourselves with healthy snacks or breakfast on the go. Preheat the oven to 230 degree Celsius. her, whisk lightly about 2-3 minutes until good amount of bubbles formed. in a separate bowl, sieve together all the dry ingredients Add 1/2 of the dry ingredients to the wet ingredients and lightly fold together, and another 1/2 and fold that in as well. In a muffin tin, butter the tin, or spray or line with parchment cups. Spoon the batter into the tin. place sliced banana on top of the muffin batter, sprinkle the brown sugar and add a small drop of melted butter on top. Bake for 25-30 minutes or until a toothpick inserted at the center comes out clean. (Smaller or mini muffins takes about 15-20 minutes) Once cooked, remove from the oven and place the muffins onto a cooling rack. Note that the more ripe the banana, the sweeter and more aromatic the end product will be. You can add chocolate chips, walnuts or almonds to the recipe as you like! |
